Gluten free latkes (potato pancakes)



Receta de latkes (potato pancakes)

Ingredients


2 pounds of potatoes
2 eggs
Salt
Pepper
Frying oil
Onions (optional)
Flour (optional)
Sugar, if you like a “poilische”, sweeter version

Preparation

1. Grate potato and onion with coarse grater
2. Add the beaten eggs with salt and pepper (and the flour, if you prefer)
3. Mix everything.
4. Take a small amount the size of the spoon and deep fry it
5. Remove and place on absorbent paper
6. Sprinkle with sugar, if you like a sweet version
