One pound of chickpeas
2 garlic cloves
Half teaspoon of cumin
4 tablespoons of lemon juice
3 tablespoons of tahini (sesame paste)
Salt and pepper
Soak the chickpeas overnight and then cook them.
Reserve the cooking water
Process the chikpeas in a blender with garlic, cumin, salt, pepper,
lemon juice, tahini and a quarter cup of chickpeas’ cooking water.
If it is dry, add a little water until thick as mayonnaise
