Leek fritters (keftes de prasa)

Simple and addictive, 'keftes de prasa' are a Mizraji classic for the Rosh Hashanah table


1 pound of leek
3 eggs
3 tablespoons of flour
1 teaspoon of baking powder
Salt to taste
Black pepper or ground hot pepper
1 quart teaspoon of Cayenne pepper
1 quart teaspoon of cinnamon
Frying oil

Directions step by step

Cut the leeks and sauté in oil
Wait until cooled
In a bowl, mix the eggs with the flour and seasonings, then add the leek
Take a tablespoons from the mixture, and put in a pan with hot oil
Remove fritters when golden brown
